Can someone tell me if I make a coconut cake today (from scratch) for a Saturday event and freeze the cake tonight and take it out on Thursday to start to decorate, will the cake be extremely moist (too wet)?

I'm just thinking that with coconut the cake may be too, too moist almost wet kind of. This will be the first time I will be making a coconut cake so this is why I'm asking the question. Appreciate any advise on this. Thanks.

Nope, it should be just fine and dandy (as long as it was baked correctly)! thumbs_up.gif
