Can I Use Frozen Baby Carrot For Carrot Cake?

I have another question... icon_redface.gif I just realize I do not have carrots at home, icon_cry.gif can I use the frozen baby carrots I do have, so that I can make a 6in. round carrot cake? icon_confused.gif This is also the first time I will be making a new flavor! icon_eek.gificon_eek.gif

i would worry there would be too much liquid in them? just as they always seem so mushy! and then tough to grate - unless you do it while frozen,and let thaw on kitchen paper? im afraid i dont know! have you typed the question into google? that might throw up an answer too.

I wouldn't...I find the texture of thawed carrots to be odd.
