I have another question... I just realize I do not have carrots at home, can I use the frozen baby carrots I do have, so that I can make a 6in. round carrot cake? This is also the first time I will be making a new flavor!

i would worry there would be too much liquid in them? just as they always seem so mushy! and then tough to grate - unless you do it while frozen,and let thaw on kitchen paper? im afraid i dont know! have you typed the question into google? that might throw up an answer too.
I wouldn't...I find the texture of thawed carrots to be odd.
