So AFTER I iced my cake, I realized I used the wrong cream cheese icing recipe... I used Wilton's regular cream cheese icing instead of a *crusting* recipe... there is no wayyy what I have will crust, I'm afraid.... I'm needing to cover it with fondant.. When I do, will I have a gooey mess when we try to eat it?

My buttercream does not crust and I cover it with fondant with no issues.

I would chill each tier for about 30 minutes before you cover it. The icing won't crust but it will firm up enough to cover it in fondant. Then chill the tiers again until you have to assemble. HTH
