Has anyone made a topsy turvy cake w/ buttercream frosting and then not covering w/ fondant. I am doing one for someone else and she prefers no fondant covering the cake, but decoration is ok. I know they need a denser cake, but what about not covering w/ fondant. It will be transported about 6- 10 miles. Thank you for your help.

The topsy turvy cakes in my photos are all done in buttercream with fondant accents. I ice them before stacking and use the method in the tutorial from here. Most time all I need to do is smooth a few spots after stacking.

Same here, the ones I have done have been in buttercream. Make sure you have the proper supports, and cut the hole large enough that the next tier doesn't put pressure on the sides!
