I'd guess it would slide apart.

I do it all the time and never had a problem. Make sure you use a good dam to keep it from leaking out sides.

Stack up your cake tier without filling it--carve it--take it apart and put in that nice dam PattyCake NJ said and fill it--that way you avoid carving your dam away.
