For anyone who watched the butter cream episode, did I see correctly that Alton only used butter, eggs, and syrup...no powder sugar???

Must have missed that episode but if he did, it sounds to me like he was either making Swiss Meringue or Italian Meringue buttercream.

Italian being my personal favorite! (doesn't crust though) HTH

Bridge72 why do you prefer Italian over the Swiss? I haven't made it yet so wonder what the differences are. Swiss was yummy! icon_smile.gif

It tastes more like whipped topping to me..especially when I add marshmallow flavoring to it. Yummy! And ppl who I've made cakes for have asked me if their is any left to package it up in a bowl so they can eat it with a spoon.[/quote]

@Shearpamela: They're almost the same...it's just the way you make them that makes it different. IMBC, you have to make the syrup and pour it once you have your meringue ready... and SMBC, you heat eggwhites and sugar together then beat them. They both taste great.
