Cream Cheese Icing That Doesn't Need To Be Kept In The Frig

Anyone have any ideas? I love the crusting cream cheese icing on here, but I worry if I need to have it in the frig, I'm going to cover the cake in fondant so I don't want to keep it in the frig.

Microbiology 101 - the high sugar content inhibits bacterial growth. I wouldn't leave it in 90 degree heat for hours on end, but I also don't worry about leaving it at a reasonable room temp for a day or so.

Many people refrigerate cakes covered in fondant without problems. Just allow any condensation to dry before touching it.

Whether or not it needs refridgeration depends on the recipe. The ones that don't need refridgeration tend to be more like butter creams with cream cheese added, so there's not as much cream cheese (or cream cheese taste - although I believe u can buy flavouring!). Have a look for earlenes recipe comes up on google I think), pretty sure that doesn't need to go in the fridge.
