Red Velvet Pillow Cake

Will red velvet hold up for a nicely carved(pointy corners) pillow cake, with 3 layers of filling? It's going to be a 10" square pillow carved out of 10x10x4" cake that has 3 layers of cream cheese filling.

I plan on using a dam for the fillings and crumb-coat with ganache to keep the corners sharp. Then another layer of buttercream and finally the fondant.
The reason I want to put that extra layer of butter cream is 1) they can peel off the fondant if they dont care for it. 2) I plan on quilting it and I like the puffy look.

Do you think this will work for the dimensions of the cake and the soft nature of red velvet? My previous attempts at pillows have been a combination of pound cake and cake mix extender which have worked wonderfully for carving.

I would love to hear if someone has successfully tried this.TIA
