How many days in advance can you crumb coat a cake? Can it stay out on the counter during this time or does it need to be refrigerated? Thanks!
I usually bake my cakes on Thursday morning, then after they're cooled I will fill and crumb coat. I allow the cakes to settle for the day and then cover in fondant late Thursday night, decorate on Thursday or Friday depending on the complexity of the cake, deliver on Saturday.
I bake my cakes on Monday, wrap well and freeze. I take out on Thurs., defrost then crumbcoat. I then chill and put my buttercream on, then back in frig. Friday I decorate. Hope this helps.
If I have a cake due Saturday, I would bake Thursday and make all my frostings. Then Crumb coat early Friday morning and finish decorating throughout the day.
I have major problems baking and frosting same day. Major air pockets!
At the earliest, I would bake Wednesday crumb coat Thursday and decorate Friday.
