C Cheese Pound White Chocolate Bake With Crusty Tops

Will too much fat content in a cake cause a crispy top to form? It's almost as though the top bakes first then the middle and these are the only two scratch cakes that do this to me. Once the tops are sliced off the cakes are wonderful but I was wondering if there were a way around this. Would baking a lower temp help???
