Help!! My Cakes/cupcakes Are Turning Out Moist!!

What do I do???? I don't understand, I tried a recipe, followed it to a T but my husband said it's a little dry!! I made it on Tues or Wednesday and he's eating it Fri night. Do I need to start making them closer to the due date? yikes!! what do I do???

I never make cuppies more than 24hrs before serving unless I plan to freeze them. Cuppies dry out really quickly, esp if your icing doesn't completely cover the top.

I would say make them closer to the date. cupcakes dry out quicker because they are smaller and aren't completely covered with frosting, especially if they are left out. Also play with your recipes and taste teste them, have friends and family taste test them. I know that it has taken me a long time to find really good recipes, and I'm still looking for some! Make sure you are not overbaking also, for all of my cupcakes I bake at 325 and that helps them turn out moister. Hope this helps.

I also bake my cupcakes at 325 and never bake them more than 1 day ahead.
