I am doing a wedding cake soon and am going to try the smoothing technique with crusting buttercream and viva paper towels. Saw a post about frosting cracking ,,, this scares me!!!!! Any tips much appreciatedicon_smile.gif

If the post you saw didn't have a solution or tips, the most common cause is from using a base board that isn't sturdy enough, so the icing cracks when you move the cake on its flexible board.

Cracking can also happen if you let it crust way too long. It only needs 10-30 minutes or so, just till you can touch it without picking up icing. Don't worry about it, the technique works great. Another great smoothing technique in addition to viva is to gently roll it with a (new) high density foam paint roller (often referred to as Melvira technique for the CCer who posted about it).
