I was interested in hearing recipes for fillings that require no refrigeration. Please share, if you are willing, what your favorites are.

I don't refridgerate any of my cakes and I use all butter buttercreams (inc meringue), ganache and preserves with no problems whatsoever. I don't use things like mousses, milk-based fillings (pudding/custards), cream cheese or fresh fruits.

I use BC quite a bit, and flavor it to compliment the cake. If someone wants a cream/pudding or fruit filling, I buy fillings (such as Henry & Henry) that come in plastic sleeves. My customers seem to really like the raspberry, lemon, and cream cheese one the best. Those are the top 3 (besides BC) that get requested quite a bit.

I make Bettercreme mousses and I use preserves, ganache & buttercream.
