I am making this cake today and the recipe calls for a 7 inch square pan. I couldn't find 7 inch, only 8. Do you think I will have a dried out cake with this or should I double the recipe and just pour the batter @ 2/3 of the way. BTW, it is a Wilton 8x2.

Yes, I would make enough batter to fill the 2" pan you have to 2/3 full.
