hi i'm looking for a recipe for peach cobbler cupcakes, does anyone no of one thats really good and easy, one from a cake mix would be good. Thanks.

Mine is scratch. If you are interested, let me know. The batter is more cake-like, vs crumb or pastry and it is easy. You do have to cook the fresh peaches.

Peach Cobbler Cupcakes

6 tbsp butter, melted
3/4 c sugar, more for sweeter batter
1 1/4 c self rising flour
1 c milk

For peaches...
2-3 c peaches, cubed, you don't have to peel
1/2 c sugar
3/4 c water

Cook peaches in water and sugar until slightly soft.

Mix flour, sugar, and milk by hand until incorporated. Add drained peaches and some syrup and just swirl, do not incorporate. Add butter and again, just swirl. You will have clumps of batter and little streams of butter, peaches, and syrup. Scoop in muffin cups and bake at 350 until toothpick has some crumbs and top bounces back to the touch.

I have topped these with cream cheese icing and peach puree infused whipped cream, but my family prefers them plain. If you want the puree, use some of the cooked peaches and syrup. Vanilla icing may be good too.
