Do they make cupcake dummies? I would like to make a display with special decorations for my class, but obviously don't want to use real cupcakes! Yuck, would these mold? Or would they just get real stale and dry due to the size?

You can do that or (like me) can use the insulation foam used for construction. Someone here in the forum give the tip instead spend $$ in dummies. I don't remember the name now but, as soon as I get home, I am going to pm you the name. You follow the instructions, fill the cupcakes liners in the tin just half and wait until hardens. If you go to my page some of the cupcakes are dummies (using this method). I made them to show the students what kind of cupcakes they were going to learn in the class I was offering at that time.
