A few weeks ago, I came across a recipe for a hazelnut cake that started with a yellow cake mix. I thought I saved it, but can't find it anywhere. I don't recall if I found it on CC or another site, but now a Google search doesn't turn up anything. Does this recipe sound familiar to anyone or do you have a recipe you could share?

I have never seen it, but I would love to have it if anyone comes up with a tested recipe.

Hi ~ I just found the following online for a hazelnut cake & icing:

Hazelnut Vanilla Cake

Cake
1 7/8 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
5 oz hazelnuts
3 eggs
¼ cup double strength FlavorCoffee Hazelnut Vanilla Coffee (cooled)
or ¼ teaspoon FlavorCoffee Hazelnut Gourmet Flavor and ¼ cup milk
1 ½ cups sugar
1 teaspoon vanilla extract
½ cup melted butter, cooled
Preheat oven to 350OF. Lightly grease a 9x9 pan or a 10 round pan.
In a medium-sized bowl, mix together the flour, baking powder, and salt. Process the hazelnuts until ground in a food processor and add to flour mixture.
In a large bowl, beat together the eggs, coffee (or gourmet flavor and milk), sugar, and vanilla extract for about 3 minutes. Add the butter and mix.
Add the flour mixture to the egg mixture and mix well. Spread batter into the greased pan.
Bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.
Cool completely before icing. In the meantime, prepare the butter icing.
Butter Icing
½ up butter
4 oz semi-sweet chocolate chips
1 egg
3 tablespoons sugar
½ tablespoon double strength FlavorCoffee Hazelnut Vanilla Coffee
or 3 drops FlavorCoffee Hazelnut Gourmet Flavor
Microwave butter in a microwave-safe bowl, until melted. Add chocolate chips and stir until melted.
In a small bowl, beat egg, sugar, and coffee (or gourmet flavor) until the sugar is completely dissolved. Add to the chocolate mixture and stir well. Refrigerate until thickened, stirring occasionally. Spread over cooled cake.
Garnish
Decorate cake immediately after icing with1 oz whole hazelnuts or hazelnut halves, or sprinkle with 1 oz ground hazelnuts.

I have one for you also. It's from the Whimsical Bakehouse and it never fails.


Prepare your pans, my recipe is for 8" rounds. Preheat your oven the 350F.

1 stick unsalted butter (I personally use Land O lakes)
1 1/2 cups light brown sugar packed

Cream the butter and sugar until light and fluffy.

Add, one at a time, 2 large eggs. Room temp is a must.

Sift together:
1 3/4 cups AP Flour (I like unbleached King Arthur, but I will use Pillsbury)
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon baking soda

Add the dry mixture to the butter and egg mixtre alternatively with:

1 1/4 cups sour cream

Beat just until smooth and fold in 2/3 cup toasted hazelnuts (I blast them in a processor).


Fill each pan half full and bake for 20 to 25 minutes or until a tester comes out clean.

6 Eggs
250 gr sugar beat in mixer until white creamy and doubled in volume,

then fold in

2 teaspoons vanilla sugar or vanilla extract to taste, 400 gr ground Hazelnuts, 50 gr flour, 2 teaspoons baking powder

bake at 170 deg Celsius for 45 minutes
