I got a request for a Lemon cake with a light, not so sweet filling. At first I was thinking like a raspberry mouse but do any of you have any ideas?

Thinking same as bakingpw: lemon curd? Or lemon mousse?

You could make a whipped creamy filling and swirl the lemon curd in it, so it isn't so strong - much like using a mousse - yum!

Raspberry mousse, your first idea, is also a complementary flavor if you want to go the other way and not do lemon on lemon.

You could do Lemon curd and then cream it into cream cheese. I did this and ligtend it with whipped cream for a icing one time and it turned out really good. Otherwise you can not usually ever go wrong with just lemon curd from scratch though, I hate canned stuff.

If you want Raspberry though i would go with either a mousse or do a lemon mouse with fresh raspberries or a raspberry glaze and mousse to just really punch the flavor.

Just this week I made this cake from the following recipe and the curd (just like the whole cake) was soooo delicious! I f you don't want it so sweet, try using less sugar as it is quite sweet in the original recipe.

Thanks. Every time I've had lemon curd it has been pretty sweet(which I like). This is going to sound sort of stupid but I've only make a raspberry mousse so would I just switch add lemon instead?

I'm not sure if I understood you 100% but if you want to make a raspberry mousse that wouldn't be like a curd, more like whipped cream mixed with fresh raspberries and if you like some raspberry puree.

If you want to make a raspberry curd I would (haven't tried that though..) switch the lemon juice for a mixture of 75% (seedless!) raspberry puree and 25% water.

then I would probably make a lemon curd and mix it with whipped cream.
