I usually do a cream cheese filling for Red Velvet... or... Vanilla mousse works well too..

how about something with raspberry? has anyone tried it with chocolate moose?

I've used a white chocolate, vanilla and cheesecake mousse. The easiest yummy mousse I have found is one small box of instant pudding and one pint whipping cream. Whip until peaks form. This filling is so good and stays nice and stable for up to one week. I have found white chocolate and cheesecake flavored pudding at Walmart.

red velvet with a chocolate flavored filling is also very good.

I've used cream cheese frosting, oreo filling (minus the oreos), and white chocolate ganache. The ganache was almost over the top-rich, but it tasted great.
