I am wondering if someone can tell me how big mini cakes are supposed to be. I want to do round, 2 tiers mini cakes but I am unsure what size to use. Thanks.

Just a little insight. I have the Alan Silverwood pans, round and square. I went to do my first wedding of 160 square this weekend, it took forever, my fault. First I sat them on a cookie sheet that had sides, didn't know that they middle ones wouldn't get done. Then I read where you are suppose to use reusable liners in them, but only the UK carries them, can't get them to Iowa in a day, the chocolate cakes were so moist that when we went to cut them to fill them, they fell apart, didn't figure out to freeze them until we were at the last 15. Never, ever will do this again for a big wedding. It wouldn't have been so bad, but we had another huge wedding, and four other cakes. I even called in my DIL's to help with this one, thank God we got them done and delivered on time.

My squares were 3X3, rounds I think are 2".
