I have to make 9 baby blocks. The blocks will be about 5 inc squares. Can someone tell me the best way to cover them in fondont? Is it easy? I have never done them before.

You should experiment with pourable fondant. You can tint it any color and it is super fast at setting up.

Wow, if it was just 1 big block I would cover it with fondant panels, but 5-5" cakes would be alot of work to use panels.

I would say, make sure you start with square cakes that have nice sharp edges. You might want to cover your cake in ganache rather than crumb coating in buttercream to help keep you edges straight. Cover with fondant, and use 2 fondant smoothers together at the corners for trying to get good edges.
