Cream Cheese Filling

I am making a red velvet wedding cake and was planning to use the sleeve of cream cheese filling since I assumed it was ok to be left out for many hours. Now I see it needs to be refrigerated after opening. Is it OK to leave this cake out for many hours?
All the Cake Challange pros are always using homemade cream cheese fillling and don't seem to worry about it. Do any of you do that?

I think if you mean from the time you decorate it until the time it is served, as long as it is the same day, then ok. Overnight, no. Hope this helps.
