Can a meringue butter cream be used under fondant? Other than buttercream, what else can be used under fondant and is easy to use?
I love ganache, (either chocolate or white chocolate) under fondant. That being said, most of my customers request SMBC and it is fine under fondant too. I would stay away from cream cheese frosting and stabilized whipped cream, they don't do well at all under fondant
I made a cake with cream cheese frosting under fondant but it was eaten soon after it was made.
I have used cream cheese frosting and a whipped buttercream and they were both fine - a bit squishier, but manageable....
