I made Swiss meringue buttercream today for the first time. I think the icing came out fine, it's very smooth and shiny. Now I'm concerned that it may not hold up for decorating. I was planning on making a basket weave cake. I usually use an American Buttercream with half butter and half shortening.
Has anyone used swiss meringue buttercream for basketweave?
Yes you can decorate with it. Since it's made with all butter, it will get soft in your hands more quickly than an American buttercream. Just fill two icing bags, and keep one in a tray of ice while you work. If the icing starts to get soft, just switch bags. Once you put the cake in the fridge it will get hard as a rock.
