I am doing a 3D train this weekend and plan to use the ganache under fondant method. My cake will be frozen for carving. Can I successfully apply the ganache to the frozen/semi-frozen cake or should I let it thaw completely. I'm afraid of it falling to pieces if it thaws. Carved cakes are so hard to frost.
I have used ganache on semi frozen cakes and have had no peoblems.
