Somewhere on CC, I thought I read that you can freeze chocolate ganache. Does anyone do that and if so, what procedure do you use to thaw it out. In the frig or on the counter??? Thanks

Yes - you can freeze it. There are three links within this thread to confirm it was possible.

I've only done it once so far. I took it out of the freezer and put it in the fridge a couple of days ahead. (Not sure this step is necessary - probably could have just put it out at room temp.) Then set it out on the counter the night before. It was still pretty firm so I microwaved on low-low-low to soften a bit.
