I am making 150 cupcakes for a fundraiser I'm holding on Sunday (it's friday).
I've almost finished baking, a little earlier than expected. Last time I did something last this I was up until 3am the night before decorating cupcakes! So i got a little more organised this time - most of the cupcakes are in the freezer and a few on the cooling rack.
Would it be too soon to frost them today, or should I wait until tomorrow?
I have a whole bunch of other stuff to do in preparation for the fundraiser so it would be great if I could get them out of the way, but I don't want to risk them not being fresh enough.
You can always frost your cupcakes, freeze them, then wrap them & put back in freezer until you need them.
it's definitely not to early. Since you know they'll get eaten on sunday at a fundraiser I would ice today so you have time to do what you need to on saturday.
If it was for an order then i would wait until saturday because you never know if they will eat them the day of or wait a few days.
