worry about nut allergies? I want to try the Extra special butter cream recipe but I'm not sure if Almond extract is generally imitation or if I should be concerned when using it in recipes. TIA.

There is imitation almold extract. I want to say it is okay for nut allergies, where as the real deal would not be.

For me, when it is a cake that is going to be eaten by alot of people, I don't use either of them.

If you are unsure, go with an imitation extract. It will say on the bottle if it is imitation or not. Better be safe than sorry for nut allergies as they are very dangerous.
