i'm soooo not a professional, so please excuse me if these are stupid questions---
a friend of mine asked me to make a 3 tier cake for her son's christening, with chocolate mousse filling and fondant. my initial thought was that i'd suggest fudge filling instead, but i figured i'd ask the pros before that
so, my questions...
first, is it possible to fill a cake with mousse and NOT refrigerate it? i refuse to store a cake with fondant in the fridge b/c the little experience i have has taught me that it never turns out well.
second, if it IS ok to leave mousse out in AC (for ~6-7 hours), is there a prepared mousse that anyone recommends? or a particular easy-to-make mix?
