Need A Recipe For Valencia Flavoring...

I went to my local cake supply store today to buy some more flavoring, etc. and didn't see any Valencia on the shelf. When I asked about it I was told that the company doesn't make it anymore. What???

So, I'm looking for a recipe to make some myself. Anybody got one they can share?

I have been looking all over the internet trying to find some. Because htat is all I have every used. I wish they would make it again.

My wilton instructor had told me the ingredients one time but the only one I remember is cherry. That is the main one that gives it that distinct flavor. I still have a dab left in my pantry. I'm sure another ingredient is vanilla. I think there are 3 ingredients.............???

Found her email....cherry, vanilla and almond = valencia...heavy on the cherry.

That is the same recipe I was told to use. Vanilla, Almond, and Cherry extracts...Heavy on the cherry. Now, All I have to do is to get my supplier to order the cherry. I'm making a wedding cake and couldn't find any cherry to replicate the Valencia. icon_sad.gif

Olive Nation has incredible, all natural extracts. And their vanilla beans are great.

I'm wondering what would be the amounts of each also... I'm guessing that 2 tsp of cherry and 1 tsp vanilla, 1 tsp almond would be way too much flavoring?
