There are some great eggless cake recipes on allrecipes.com Here is a link to an eggless chocolate cake that I made once - my business partner's father is vegan and I made it for him. Not only did he love it, but my chocolate loving dad (who is NOT vegan) loved it too. Moist and chocolately, but it is a very thin batter that takes a long time to bake - multiple thin layers are better than one thick one. Makes a lot of batter but you could cut the recipe in half.
