I was working on a cake for tomorrow, and unfortunately there was a family emergency that canceled the baby shower...now it will be next week. The cakes have already been filled and frosted - one filling is peanut butter/cream cheese and the other is Andes mint ganache. Cake is scratch not box. Can I freeze these for next weekend? If I do, will it affect the quality?
(I'm going to have a piece of cake if not)
The peanut butter cream cheese will freeze fine. Not sure about the ganache but what do you have to lose go for it.
