I have rented my cake pans for my wedding cake I am making for this weekend. I normally use the 2 inch pans, but they didn't have the 10inchx 2 inch pan, so I rented the 3 inch one. My question is, will making the cake as if it is a 2 inch pan work? (Same amount of batter as I would use in a 2 inch)

I wouldn't under-fill the pan, you just never know if it will be enough. I'd rather have it rise properly and trim off the excess. Use the scraps as your "treat".
