can anyone help. lately my cakes are looking more like cheesecake than cake. a couple of times they did not seem like they had risen enough and concerned i cut through it and found a cheesecake consistency
i though perhaps the baking powder or soda were expired - checked and nope both were good but i bought new one and same thing happened
these are not new recipes and never had problems in past. i have 2 ovens in the house and happening with both so hard to believe it is internal temperature
any boxed cake turns out like a dream
Have you tried using any different recipes, to see if that brings any difference?
it could be that your over working your flour and making it tough ?
Are you in a hot climate? Even with my A/C on, it takes no time at all for butter to come to the right temp. Have you maybe been letting your butter get to warm and liquidy?
