hello all!! i've been searching for vegan friendly cake recipies (tried and true) and fondant recipies so that i may make a going away cake for a yound co worker next week. any information anyone can provide me with would be great. i'd really like recipies you have already tried and enjoy! look forward to your help!!-signed desperate
I belive that satin ice is vegan - well in thepry, however all white sugar is not nesescerily vegan, as it can be cleaned using chared animal bones. I have a vegan freind and looking at the ingrediant list she accepts Satin Ice.
As for cakes. If it is not a very sculpted cake I have used this recipie. I used it to make a purse cake. I did add one egg worth of egg replacer when sculpting.
Ingredients
3/4 cup whole wheat pastry flour
1 cup all purp unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup good cocoa powder
1/2 teaspoon salt
1 cup plain soymilk
1/2 cup canola oil
1 1/2 cups pure maple syrup
1 teaspoon apple cider vinegar
2 teaspoons vanilla
2 teaspoons of instant coffee
Optional Extras and Changes
1 cup Grated Zucchini (reduce the wet ingredients (oil, milk and syrup) a little for this zucchini is wet)
1 cup Chopped nuts
1 cup of roughly chopped chocolate
Can change the all purpose for whole wheat
Spices (cinnamon, nutmeg, ground all spice, ginger, ground cloves, pumpkin spice)
Directions
Preheat oven to 350 F. Spray a 9 inch springform pan with non stick cooking spray.
Sift together flours and baking powder and baking soda.
In a saucepan, heat the soymilk on low-medium heat. When it is slightly bubbling, add the cocoa powder and instant coffee powder and whisk well until it is dissolved. Remove from heat.
Combine the other liquid ingredients in a bowl and whisk well. Add the cocoa mixture and combine. Add the wet ingredients to the dry.
Pour batter into prepared pan, bake at 350 F for 25 minutes until a toothpick or butter knife comes out clean.
