How long will Swiss Meringue last. I need to make a batch today but will also need some tomorrow night for a cake. Will it be okay on the counter? I know you shouldn't put this in the fridge because it doesn't mix back up very well.

it is absoltely fine to fridge.
just let it come to room temp and rewhip (and then use your paddle on lowest speed to help remove air bubbles) and it will be just like brand new.
be warned though, it does go thru a seriously ugly looking phase before it looks like frosting again.

Great! Thanks Diane! One more question, how long will it last in the fridge? Seeing as it's only egg whites and butter should last at leas a couple weeks right? I have a huge amount of cakes to make this month for family birthdays.
