I need to do a 12" x4" high cheesecake for Saturday. Any large recipes or tips?

Here I am answering myself.
I doubled the Ultimate Cheesecake recipe from this site, stapled together double parchment paper and made my 12"x2" pan 4"high. It took 3.25 hours to bake the cake in my convection oven at 200F. The cake is wonferful and so even. I have to ice it with stabelized whipped cream and cover the top with glazed berried. That should get it 4" high or more.
Just in case anyone cared.

Did you bake your cheese cake in a water bath? Sounds like you worked it out. Good job, bet it taste great.
