I seem to have found great tasting cake recipes & choc. fillings to go with them. However I can't seem to find a consistantly loved vanilla, other non chocolate, light filling for my white or vanilla cakes. I've used just buttercream, that's to sweet. I've used Whim. bakehouses french pastry cream, that's good but just lacks a punch. If anybody knows of a great filling that's popular @ CC let me know. I def. trust you guys.

ps- my wedding cake coming up does not what any fruit in her filling.

Here's my new favorite filling to use with white/vanilla cake. It's cheesecake-y in flavor, pretty firm in consistency and I love it with lime or lemon curd mixed in. I started with one of MacsMom's recipes (my thanks to her).

16 oz cream cheese, softened
2 c white chocolate chips (1 bag)
1/3 c butter
1-1/2 t vanilla
2 c PS sifted

You can stop there, or you can add a fruit flavor such as raspberry preserves, lemon curd or lime curd. I add the flavor to taste, and I'd say I used about 1/2 c of lime curd when I made it last week.
