Can I make a white chocolate mousse with white baking chips instead of real white chocolate, or will it (like ganache) not work correctly without real chocolate?

not sure what you are using it for but a lot of times I use heavy whipping cream (2 cups) to one box of white chocolate instant pudding... works great for me every time....

Right now I'm using it for a filling for a bride who's ordering it as a cake for her fiance- as a tasting- but wants to use it as cupcakes for filling and icing for her wedding in October.
