I saw a video clip on You tube and it showed how to make coral reef using candy melts instead of Isomalt...but of course I can't find it and the site where I think it is from sells the DVD's but I don't want/need to spend $24.99

Does someone have the link? If so would you share..I kinda have an idea as I remember enough to do it but would like to be sure...

Sorry Kiddiekakes - I only know of using isomalt but would be very interested in using candy melts (cheaper of course). So here is a bump.

this may be of absolutely no use to you since it isn't an answer to your question, but i saw this chocolate (candy melt) coral on a beautiful cake on flicker and thought i'd show it as a possible alternative?

I once made Coral Reef out of candy melts and it was EASY! just piped it onto wax paper and let it dry. You need to make sure to reinforce at the branch looking things.

Perhaps you should just give it a try. Melt a few candy melts and pour it over some ice. See what happens. The worst is that you'll be out a few candy melts (which always happens to me anyways. Somehow I always lose a few in my mouth!)

I don't remember exactly where I saw it, but I know the video of which you're speaking. I believe I found it either on youtube or from doing a cake site search (Google). Anyway, I was nervous about it, but I tried the technique and it was the easiest thing in the world. I had a bowl of ice cubes and piped my melted candy melts from a parchment cone and in practically no time at all (it sets up really quickly!), I had irregular pieces of candy melts that looked very much like coral. If you look in my photos at the lighthouse cake I submitted for the throwdown a few years ago, you can see some of those pieces of coral that I used on the cake.

Besides using the ice cubes in a bowl, you can just pile up crushed ice on wax paper or a silicone mat and do it the same way, if a bowl is too small.

Just made coral out of candy melts. put it in the freezer came out good. I tried royal icing and kept cracking....

you can also heat Royal Icing in the microwave and it will expand like a marshmellow does and when you take it out let it dry a bit and the you can break it up into smaller pieces or just het different amounts at a time.

I did the royal icing thing years ago. I can't remember completely, but I want to say I poured it on to crumbled foil.

AI hope this is not too late! Here is a method I use. It creates beautiful coral candy.

450grams sugar 240 ml water 28grams royal icing

Cook the syrup to 148 Celsius, remove from heat and whip in royal icing.

The syrup will rise and then collapse (whipping hard)

Return pan back to heat and let it rise again. Pour sugar into oiled, foil-lined moulds and let cool. (Do this step fast)

Later break in pieces as desired.
