I love to make cakes covered in fondant but don't care for the taste so I find it hard too offer, could I cover my cake in buttercream and then again in fondant and then just tell my customers to remove the fondant when its time for cake? and then this way they still have icing on their piece of cake?

Nope, instead of serving a product you know isn't any good and asking your clients to remove it before eating, find a good tasting fondant product or recipe and make it your premier fondant. I use to use the Wilton and everyone hated it, then I learned to make MMF and added flavoring to it and now it's everyone's favorite.
