What frosting do you use on an ice cream cake? I have heard of using cool whip but are there others? I assume buttercream frosting would freeze too hard. Any suggestions?

Maybe Bettercreme (Rich's). I haven't tried it, but it is very stable and yummy and easily doctored to tailor the taste.

I have only had them with a stabilized whipped icing

I used whip cream: Use heavy cream whipped with a couple of Tabl. sugar and bit of vanilla extract. Ice the cake as you would a "cake" and freeze. Turns out great everytime!

i did an ice cream cake once icon_lol.gif I think I used Rich's Whipped that is in the freezer section

I've only made one (the ugly little flag cake in my pics), but I used my regular buttercream and it worked just fine, it froze hard, but softened up just fine by the time it was served.

I worked for a place that made them and we used a regular buttercream type icing mixed with Vanilla ice cream.

That sounds really good! What was the ratio of buttercreme to ice cream?

I freeze my BC so I just used my normal BC and it was fantastic! Good luck!! icon_smile.gif

I've used both Bettercream (Rich's) and my standard buttercream and both turned out fantastic
