What frosting do you use on an ice cream cake? I have heard of using cool whip but are there others? I assume buttercream frosting would freeze too hard. Any suggestions?
Maybe Bettercreme (Rich's). I haven't tried it, but it is very stable and yummy and easily doctored to tailor the taste.
I used whip cream: Use heavy cream whipped with a couple of Tabl. sugar and bit of vanilla extract. Ice the cake as you would a "cake" and freeze. Turns out great everytime!
i did an ice cream cake once I think I used Rich's Whipped that is in the freezer section
I've only made one (the ugly little flag cake in my pics), but I used my regular buttercream and it worked just fine, it froze hard, but softened up just fine by the time it was served.

I've used both Bettercream (Rich's) and my standard buttercream and both turned out fantastic
