Instead of doing one a day, why not ice/cover them all on Wednesday, decorate on Thursday, and have them ready for pick up/delivery on Friday?

Once your cakes are iced/covered in fondant, they won't dry out. I personally think that cake tastes best/more moist between day 3-5, and you aren't planning to make them that far in advance. If you are starting them three days in advance, and they'll be served on Friday or Saturday, they'll be fine as long as you aren't using fillings that need refrigeration.
