I'm doing my first cream cheese frosted wedding cake this weekend. The weather is saying the temp will be 96! I have to deliver the cake at least 3 hours before the reception since the wedding and reception will all be held in the same hall. I'm hoping the recipe for cc icing that I have will hold up but I am S-C-A-R-E-D!!!!! Any tips? [/code]

Well, I've only been doing wedding cakes for 11 years, and I won't take a cream cheese frosted wedding cake. All I can do is wish you luck!

I would use this recipe: http://www.earlenescakes.com/icings.htm You can add some dream whip powder to it and that will help even more.
