I was wondering if anyone has ever used canned pumpkin in their cake mix. I saw that you can substitute 1 can of pumpkin for the oil and eggs that a mix calls for. This supposedly makes the cake lower in fat a calories and doesn't alter the taste. Just wondering if anyone has done this.

I have done that before. I don't remember how they tasted but they must have been good, kids wiped them out!

I use applesauce instead of canned pumpkin. You can't taste the applesauce but I'm not sure about the pumpkin.

Yes, I use 1 can pumpkin and the dry mix. It makes a very moist cake that tastes to me like spice cake.

I've made that into cupcakes and it's great. Not sure how it would be as a cake, it's really moist. And yummY!

I had to do this because a groom was allergic to eggs. I used a chocolate cake mix and couldn't tell there was pumpkin in it at all. It did change the texture a bit though icon_confused.gif good luck, and i will have to try the applesauce idea too icon_lol.gif
