I am making a cake for Monday and want to know if Saturday is too early to tort and fill the cake with a cookies and cream filling. Also, is my cake going to dry out if I leave it in the fridge?

At home, due to my schedule, a start all my cakes 3 days out. It will not dry out in the frig in that short of time. Good luck!

I always try to make my cakes the day before just in case I run into any problems. If you use two cups whipping cream and a small box of instant Oreo cookies and cream pudding and whip until peaks form you will be fine. You can fold in extra cookies if you want. You can also use vanilla pudding with cookies folded in. The pudding helps stableize the whipping cream and it's so good. I have kept this filling in the fridge for days and it never breaks down.
