I'm making a large, carved Apple cake which I found in Squires Kitchen's magazine. It calls for CMC to add to the sugar paste for modelling. I don't have time to order on line as the cake needs to be ready on Tuesday. My only option is my little local kitchen shop, which has a small cake decorating section. They have gum tragacanth and gum arabic. could i substitute either of these?

Yep, gum trag. Mix it in and let the paste rest for at least 12 hrs. so it can activate.
