I was wanting to practice to get my fondant skills better. But can fondant stick to cream cheese icing for a red velvet cake? I know it will need to be in fridge so what exactly will happen to the fondant? I have made MMF to use. Plus how can you get a nice chocolate brown color for icing or fondant? I have Wilton gel brown, but I can't seem to get a nice 'monkey' brown.
Yes, you can put fondant over CC icing. You can refrigerate fondant cakes, just be sure to let them come back to room temp before touching them so any condensation dries.
I tried fondant over cream cheese and I put the cake in the fridge and covered it with fondant while cold and it kept cracking. Huge yucky mess, I havent tried again.
but I think it could have been my fondant recipe and the fact icing was cold.
