I want to make a Mad Hatter / Topsy Turvy cake and am aware that there is carving involved.
Now my question is can (should) these cakes be filled with anything than buttercream and can I add simple syrup to the cake?
It will be 2 tiers and I am afraid that it might shift with simple syrup and or filling it with anything other than buttercream.
Any advise is greatly helpful!

In my opinion, I think you should use a stiffer filling, such as a ganache, or buttercream. And I prefer the SPS when doing topsy turvy.
