I have two cakes due on Sunday. I will be covering them in fondant on Thursday night which means I will be making my MMF Wednesday night. My MMF always comes out rock hard when I put it in the fridge. Can I leave it out Wednesday night on the counter without a problem (obviously wrapped tight)

I make my own fondant and I NEVER refrigerate unless I have extra and it isn't going to be used in the next week or so. Yes, your fondant will be fine kept at room temperature.

I make my own MMF and never, ever refrigerate it. I kust wrap it in plastic wrap well and then store it in a ziplock plastic bag. Once it is on the cake I also leave the cake out on the table overnight. Never had a problem. icon_smile.gif

Great! Thanks! I was hoping that it was ok. I can't stand trying to microwave it to soften it and then trying to knead it!
